eCornell Bolsters Batali & Bastianich Hospitality Group's Growth with Online Training
ECornell announced today that it has been selected by the acclaimed
Batali & Bastianich Hospitality Group (B&BHG), an industry
leader in hospitality, to provide an online professional development
program for employees working at each of the group's 26 restaurants .

SANGIOVESE DINNER featuring Paolo de Marchi
It is all but impossible to overstate the impact Paolo de Marchi has had on Tuscan wine. Since taking over his family’s Isole e Olena property in 1976, at the tender age of 20, he has become not only one of Italy’s most influential winemakers—routinely discussed as one of the best small producers in the world—but also one of Tuscany’s staunchest and most erudite advocates. He produces a range of wine: most notably a benchmark Chianti Classico and the 100% Sangiovese Cepparello, one of Italy’s first (and still most important) “Super-Tuscans.” He also produces international varieties like Chardonnay, Syrah and Cabernet under the Collezione de Marchi label, all of which are as highly regarded as his Sangiovese.
We are very excited to welcome Paolo to the Osteria for what is sure to be a very special evening. Along with a five-course menu prepared by Chef Matt Molina, we will taste through Paolo’s Chardonnay, two vintages of Chianti Classico, his rare and spectacular Vin Santo, and six (!) vintages of the flagship Cepparello stretching back to 1990. chi SPACCA, which translates to “to chop,” is a departure from B&BHG’s other California eateries. Sandwiched between Osteria Mozza and Mozza2Go, the dark-toned, warmly lit space seats 30. Dining at chi SPACCA—surrounded by shelves of wine and a lively open kitchen—is like being a guest in an Italian home, with great company and magnificent food.

Marco Pallanti has spent the last three decades working with his wife Lorenza at their pristine estate in the small hamlet of Gaiole, some fifteen miles north of Siena, and in that time has positioned himself firmly in the pantheon of the world’s top winemakers. Even more significantly, perhaps, he has been a chief advocate in the longstanding fight to rehabilitate the reputation of Chianti as one of Europe’s great wine regions. Indeed, Marco is one of Tuscany’s great authorities on this storied area, and we are overjoyed to welcome him to the Osteria this month for a very special dinner. We’ll be sampling twelve of CASTELLO DI AMA’s fantastic wines— including some coveted older bottles from Marco’s personal cellar—paired with a five-course, Tuscan-inspired menu from Chef Matt Molina. Gaia Gaja Osteria Mozza’s Primo Ministro Room Monday, October 22nd at 7:00PM
For lovers of great wine the world over, GAJA needs no introduction. In continuous production since 1859, the estate rose to real prominence in the 1960s and 1970s under the direction of Angelo Gaja, the great-grandson of founding patriarch Giovanni. Angelo’s mark on Piemontese wine—and on Italian wine as a whole—has been immense. For virtually his entire career, he has eschewed dogma in favor of what might be called a progressive pragmatism, remaining at the forefront of technological innovation while exhibiting a profound respect for the Piemontese traditions that mark the land as deeply as do the rolling hills. On the one hand, for example, GAJA was among the first producers in the region to experiment with small French oak barriques; yet, like the staunchest of the ‘old-school’, they continue to utilize some of the largest and oldest botti (big barrels) available. Similarly, though Angelo was widely criticized for planting international varieties like Cabernet and Chardonnay in the late 1970s, he persists in making his flagship Barbaresco traditionally, by blending fruit from multiple vineyard sites. Now, in his seventies, Angelo has passed much of the operational side of the business to his dynamic daughters, Gaia and Rossanna. And later this month, Gaia Gaja herself will join us for what is sure to be an evening of epic proportions: a six-course Piemontese feast paired with fifteen GAJA wines in all, including a horizontal of cru Barbareso from the 1999 vintage and a blind-tasting flight of current releases, a vertical of Brunello di Montalcino from the family’s Pieve Santa Restituta property (acquired in 1994), and some very special surprises along the way.

Special Wine Dinner with Pio Boffa Owner and Winemaker of Pio Cesare
In 1881 Cesare Pio determined that he would take the bounty of his family's vineyards in the Barolo region and create wines that conveyed the history, place, and passion of the region. Five generations later Pio Boffa carries on his grandfather's legacy at one of the most historic estates of Piemonte. Osteria Mozza is honored to host Mr. Boffa as he guides us through a tasting of the estate's wines and its' balance of both traditional and modern technique.
We will start with the cool, crisp and refreshing 2009 and then move on to the amazing single vineyard Barbera d'Alba the "Fides" 2006, a rich and dense wine that rewards Cesare Pio's decision to plant Barbera where most would plant Nebbiolo. We will then explore the 2005 Barbaresco and 2006 Barolo and discuss the nuances between these two great wine regions.

Featured Wines For December White Wine - 2006 Foradori "Myrto" - a very unique blend from Trentino, this wine combines the raciness of Alpine Sauvingon with the roundness and creaminess of Incorcio Manzoni, a hybrid grape of Riesling and Pinot Bianco. The wine sees a kiss of new oak, so in addition to pear and apple notes, there are hints of vanilla and baking spice as well. At three years old, the wine has developed a soft, velvety palate and long creamy finish. This could be an excellent wine to enjoy with our Bianca Pizza or the Gorgonzola Dolce, fingerling potato, radichio and rosemary.
Red Wine - 2007 Dacapo Ruche di Castagnole Monferrato "Majoli" - Ruche is a rare grape, only about 100 hectares (220 acres) of it planted in all of Italy (and therefore all the world). We love this wine for it's very intriguing nose of rose petal, pine needle and wild berries with just a hint of black pepper. The wine is soft on the palate, with medium tannins and a lovely, zippy finish. And a perfect wine to wash down the fennel sausage pizza!
